 Remark
 The meat is white, soft, juicy and good in taste after cooking. The soup is transparent, fatty with a pleasant taste and flavor. An excellent table fish. The large size and extremely high taste qualities, similar to those of the Siberian nelma, make this fish a `golden constituent' of mixed catches. The meat is an excellent raw material for different culinary products: fried, jellied, with liquid sauces, roasted in dough, as cutlets, meat balls and roll.
